1. Add warm water, yeast, and sugar to a large mixing bowl or stand mixer. Give it a few stirs; let sit 5 minutes until foamy.
2. Add olive oil, salt, and 1 cup flour. Mix until incorporated. Gradually add the flour 1 cup at a time. Mix until it forms a sticky dough. Place dough in a large, clean oiled bowl and let raise in a warm spot until doubled (about two hours).
3. Pour dough onto a floured surface and roll it around so it's not sticky. Roll out into a large rectangle, about 1/2-3/4” thick.
4. Spread softened butter evenly to the edges of your dough. (If you’re using lemon/orange zest, massage it into the sugar.) Sprinkle the sugar evenly over the dough. Add berries and spread evenly.
5. Roll dough from the shorter side of the rectangle. Cut dough into even slices (usually about 10-12 slices). Place in a well-buttereds 9x13” pan. Cover with kitchen towel or Saran Wrap. Let rise for 20 minutes. During this time, preheat the oven to 350*F. Bake for 22 minutes (or 20-25 mins depending on your oven). Check for doneness at 20 minutes, cook longer if needed.
6. While cooking, combine all ingredients for the glaze using an electric mixer or whisk. Mix until smooth.
7. After rolls are done, top with glaze and let sit 5 minutes before serving. ENJOY:)
